Rich Fruit Cake

Ingredients to make Rich Fruit Cake

  • Flour -1 cup
  • Sugar - 3/4cup
  • Melted butter - 1/2cup
  • Milk - 1/2cup
  • Seedless Dates (Chopped) - 1/2 cup
  • Cherries (Chopped) - 1/4 cup
  • Grated orange rind - 2 tsp
  • Cinnamon - 1/2 tsp
  • Pomegranate Seeds - 1/4 cup
  • Baking Powder - 1 tsp
  • Baking Soda - 1/2 tsp
  • Mixed Fruit essence - 2/3 drops

How to make Rich Fruit Cake

  1. Sift the flour along with baking powder and baking soda. keep aside.
  2. Powder the sugar and place it in a mixing bowl.
  3. Add melted butter and orange rind and whisk till nicely blend
  4. Slowly fold in the flour mixture into it.
  5. Add all the chopped fruits, essence and mix well.
  6. Add milk and mix it nicely.
  7. Grease a baking tin and pour the mixture into it.
  8. Place the baking tin and bake for 30 minutes or till done.
  9. Once done allow it to cool on a rack.
  10. Decorate with fresh strawberries or any available fresh fruits.
My Tip: While adding the chopped nuts always dust it with flour so that it doesn't sink to the bottom of the baking tin.
