AUSTRALIAN LAMINGTONS

Ingredients to make AUSTRALIAN LAMINGTONS

  • 100 grams all - purpose flour
  • 1 teaspoon baking powder
  • 100 grams butter at room temperature
  • 200 grams white sugar
  • 2 eggs at room temperature
  • 1/2 teaspoon vanilla extract
  • For chocolate frosting ;
  • 250 grams icing sugar
  • 20 grams cocoa powder
  • 2 tablespoons butter
  • 50 millilitre milk
  • coating : 150 grams dried coconut

How to make AUSTRALIAN LAMINGTONS

  1. Preheat your oven to 350 degrees Farenhite ( 180 degrees C).
  2. Line the sides and bottom of a square cake pan with parchment paper.
  3. In a large bowl sift the flour, baking powder.
  4. In a bowl, with a hand or electric mixer beat the butter and sugar until light and fluffy.
  5. Add eggs, one at a time, beating well after each addition.
  6. Add vanilla extract and beat until combined.
  7. Fold in the flour mixture in three additions gradually.
  8. Spread the batter into the prepared baking pan and smooth the top with the back of a spoon.
  9. Bake in preheated oven for 20 -25 minutes or until a toothpick inserted in the center of the cake comes out clean.
  10. Cool the cake, remove from the pan, remove the parchment paper.
  11. Once the cake is completely cooled cut the cake into 2 inch squares.
  12. Chocolate frosting :
  13. Place the sugar, cocoa powder, butter and milk in a heatproof bowl I've a saucepan of simmering water.
  14. Stir the mixture until it becomes smooth and of pouring consistency.
  15. To assemble the lamingtons :
  16. Place the coconut in a large plate. One at a time, dip the squares of cake in the coconut.
  17. Gently transfer the lamingtons to a wire rack to set.
  18. Once the lamingtons are set, store in an airtight container and enjoy them for several days.
