Rice Papper Pockets ( A Vietnamese Spring Rolls)

Ingredients to make Rice Papper Pockets ( A Vietnamese Spring Rolls)

  • rice paper sheets 16 ( roti sized)
  • chicken boiled and shredded 1 cup
  • Purple cabbage 1 cup ( cut in long stripes.)
  • carrot chopped think long strips 1/2 cup
  • mint leaves a bunch ( 1 cup leaves)
  • capsicum 2 finely chopped
  • spring onions 1 cup
  • White onion thin slices 1/2 cup
  • olive oil 1/2 teaspoon
  • salt 1/2 teaspoon
  • pepper powder 1/2 teaspoon
  • ginger cut in long stripes 1 tablespoon
  • coriander leaves finely chopped 1 tablespoon
  • Oregano 1 teaspoon
  • Paprika powder 1 teaspoon ( optional )
  • For dipping sauce
  • Sesame oil 3 tablespoon
  • peanut butter 3 tablespoon
  • sugar or honey 3 t easpoon
  • lemon juice 2 teaspoon
  • Soya sauce 3 teaspoon
  • White vinegar 2 teaspoon
  • Black pepper 1/2 teaspoon
  • Crushed garlic cloves 4
  • Cayenne pepper 1/2 teaspoon

How to make Rice Papper Pockets ( A Vietnamese Spring Rolls)

  1. Heat olive oil and saute all vegetables except mint for a minute. Let it cool.
  2. Add salt , pepper, oregano and paprika powder.
  3. Mix all ingredients to make a peanut dipping.
  4. Keep warm water handy. Take a rice paper sheet. Dip it in warm water just for 2 seconds and put it on a kitchen towel.
  5. Take the sheet on a work surface. Put 7 to 8 mint leaves on it.
  6. Put some shredded chicken and vegetables.
  7. Fold 1/3 of a sheet. Than fold from two sides and roll tightly.
  8. Serve with a dipping sauce.

My Tip:

Be careful not to dip a sheet in water for even a little longer time. Give little time to become soft on kitchen towel. Can slightly grease ( 1 drop) work surface for ease of folding. My sheets were of regular roti sized. So one can have 4 spring roll pickets easily. The thinner the quality of Rice paper the less warm water required.
