Cream Of Mushroom

Ingredients to make Cream Of Mushroom

  • Mushrooms - 250 gms
  • Chicken/vegetable stock - 1 & 1/2 Cups (Water will do too)
  • Milk - 1 cup (full cream)
  • Paprika - 1 tsp
  • Black pepper as per taste
  • Onion - 1/2 chopped finely
  • Garlic powder - 1 tsp
  • Refined flour - 2 Tbsp
  • Butter - 1 tbsp
  • Juice of 1 lemon
  • Salt to taste

How to make Cream Of Mushroom

  1. Clean the mushroom and grind coarsely in a blender with the lemon juice.
  2. In a sauce pan, add the butter and all the spices and herbs.
  3. If instead of powder you are using fresh onion and garlic then saute them nicely and make sure they boiled well to have become soft and tender.
  4. Add the flour spoon by spoon alternating with milk.
  5. Add in the ground mushrooms.
  6. Cook for a few minutes then add in the the chicken or vegetable stock.
  7. Adjust the stock level to ones personal requirement. But make sure the soup doesn’t turn watery.
  8. Serve warm, garnished with a parsley leaf.
My Tip: Tip: When adding flour, keep whisking to prevent any lump formation.
