  • shallots/Small onion -15
  • green chillies - 3
  • Curry masala Powder(or you can use sambar powder)- 1 teaspoon

  • Oil- for preparing masala- 2 teaspoon
  • oil - for cooking uthappam - as needed
  • salt - as needed

How to make Amla Masala Uthappam/Amla Masala South Indian Pancake

  1. For the preparation of Amla Masala:
  2. Deseed the amla and roughly chop it.
  3. Boil the amla till well cooked or cook it in pressure cooker with around 1/4 cup of water for two whistles.
  4. Mash the amla well. If there is a little excess water no worries as we will saute in next step.
  5. Chop the shallots roughly and finely chop the green chillies.
  6. Heat a pan with the two teaspoon oil.
  7. Add in the chopped shallots and saute for a minute.
  8. Now add the finely chopped green chillies and saute for 30 seconds.
  9. Add the turmeric powder, curry masala powder and coriander powder and mix well.
  10. Add the mashed amla and mix.
  11. Add salt as per need. You need to adjust if your dosa batter already has salt in it.
  12. Saute well for two minutes.
  13. Now the mixture will start leaving the sides of the pan.
  14. Add chopped coriander leaves and give it a mix and switch off the stove.
  15. For making the uthappam:
  16. Mix the prepared masala in the dosa batter.
  17. Heat the dosa pan.
  18. Add a ladle full of the batter to the pan. Do not spread too much just a little.
  19. Drizzle oil at the sides of the uthappam.
  20. Flip it over a while to cook it on the other side too.
  21. Repeat the same for the rest of the batter too.
  22. You can have it hot with chutney of your choice!.

My Tip:

1. Be careful while adding salt in masala. If your dosa batter has salt already, Add accordingly. 2. Make sure uthappam is cooked well on both sides.
