Ingredients to make Upma Loaded With Veggies

  • semolina 1 cup (measuring cup)
  • Bengal gram a tbsp
  • Black mustard seeds a tsp
  • onion 1 small thinly sliced
  • peanuts 2 tbsp
  • curry leaves few
  • coriander leaves chopped 2 tbsp
  • salt to taste
  • Veggies of your choice sliced thinly about a cup
  • oil about 2 tbsp for upma and 1 tbsp for sauteeing the veggies
  • cashewnuts 2 tbsp (optional)
  • garlic mince a tbsp
  • green chillies chopped finely or chilli flakes 1 tbsp
  • Hot water 2 to 2 1/2 cups

How to make Upma Loaded With Veggies

  1. Heat the oil in a non stick pan.
  2. Add the black mustard seeds and the curry leaves
  3. After a minute, add the onion and the garlic mince.
  4. Saute them until done.
  5. Add the bengal gram and the peanuts along with the cashews.
  6. Add the chillies now.
  7. Add the semolina after mixing up well and roast it for 3 to 4 mins, stirring it occasionally.
  8. After the semolina is done, add 2 to 2 1/2 cups of hot water and salt. Mix well and lower the flame.
  9. Simmer until done. Check the consistency. You may need less or more water depending upon the quality of the semolina.
  10. Garnish with coriander and load with stir fried veggies before serving.
  11. For the stir fry veggies, just heat the oil and slightly stir fry them to retain the crunchiness.

My Tip:

You can add any of your favourite veggies friends. It is a much more healthier version of the regular upma.
