Vegetable Upma

Ingredients to make Vegetable Upma

  • semolina - 2 cups
  • Vegetables cut into small pieces- 3 cups (Peas, carrots, potatoes, cauliflower, capsicum, etc.)
  • mustard seeds - 1/2 tsp
  • curry leaves - 5-6
  • cashew nuts - 4-5
  • Green chilies (chopped) - 3 to 5
  • onions (medium,chopped)- 2
  • Refined oil - 1/3 Cup
  • salt - to taste
  • sugar -1/4th tsp.
  • lemon juice (optional)- 2 tsp

How to make Vegetable Upma

  1. Dry-roast Semolina (suji) until it just begins to turn brown, keep aside.
  2. In a large saucepan/wok, heat the cooking oil.
  3. Add mustard seeds and curry leaves; then wait for them to sputter. Then add green chillies and chopped onions and fry until onions caramelise.
  4. Add vegetables, salt and 2 cups of water, and bring to a boil.
  5. Add the roasted semolina and sugar, turn down the heat, and mix quickly to avoid lumps
  6. The upma is done when all the water is absorbed by the semolina.
  7. Add the lemon juice and mix well.
  8. Garnish with grated coconut and cashew nuts.
  9. Serve hot for breakfast or pack in lunch box.
