Mango Steam Sandwich Cake

Ingredients to make Mango Steam Sandwich Cake

  • Alphonso mango puree - 4 cups
  • Idli rice flour - 2 cups heaped
  • jaggery 1 cup
  • Scraped fresh coconut 1 cup
  • water 2 cup or less
  • salt 2 pinch
  • Soda 1/2 tsp
  • cardamom Powder 1/8 tsp
  • some mango pieces for filling
  • mango sauce for serving

How to make Mango Steam Sandwich Cake

  1. Roast the rice flour till it changes colour .
  2. Dissolve the jaggery in the water.
  3. Mix all the ingredients except the soda and the accompaniment ingredients.
  4. Use little less water than the given quantity. Check the consistency. Add more water only if required. It should be of pouring consistency but not runny.
  5. Keep it covered for 30 min for the idli flour to absorb moisture.
  6. Grease a plate, or use a dhokla stand if you have.
  7. Dissolve the soda in a very little water and put it in the batter. Mix well and immediately pour ladlefuls of the batter in the plates.
  8. Steam them in a steamer for 15 - 20 min till cooked and a knife comes out clean when poked in the centre of the cake .
  9. Remove from the steamer and allow it to cool.
  10. Make sure you pass a knife around the edges of the plate so that the cake will loosen from the sides.
  11. Now remove from plate and Sprinkle some elaichi pdr on top
  12. Make a sandwich with mango steam cake place mango slice in between two pieces of cake decorate with cheer and serve with mango sauce. Enjoy

My Tip:

if you don't like jaggery, you can replace with sugar
