Tomato Crostini

Ingredients to make Tomato Crostini

  • 4 tablespoon extra virgin olive oil
  • 4 garlic cloves minced
  • 2 red plum tomatoes chopped
  • 1 teaspoon white wine vinegar
  • 1 teaspoon sugar
  • 1 teaspoon thyme
  • Kosher salt to taste
  • peppercorn to taste
  • Few parsley leaves
  • 8 slices Baguette cut diagonally into 1/4 inch

How to make Tomato Crostini

  1. In a mixing bowl add chopped tomatoes , vinegar ,sugar ,thyme and parsley .
  2. Mix well.Season with salt and pepper.
  3. Heat 2 tablespoon olive oil in a pan and add garlic.Stir and cook until a little burnt or brown in color.
  4. Remove garlic from oil and add another 2 tablespoon of oil in the pan.
  5. Arrange slices of bread on the pan and toast them till nice golden and crispy.
  6. Top the toasted bread with the tomato garlic mixture. Serve immediately.

Lovely recipe :D But can we use common salt instead of kosher salt?
