3-Ingredient Almond Butter Cookies

Ingredients to make 3-Ingredient Almond Butter Cookies

  • 4 tsp- almond butter (I used homemade )
  • 8 tsp- oatmeal/oats powder/powdered oats
  • 2 tsp or more- jaggery powder (or sugar)
  • 1 tsp- flax meal - alsi (optional)
  • cinnamon (dalchini), elaichi, or fennel powder(saunf) - optional - choose any spices or flavoring agent

How to make 3-Ingredient Almond Butter Cookies

  1. Soak flax meal in 2 tsp of lukewarm water for 10 minutes. You will get flax meal paste.
  2. Grind rolled oats to powder.
  3. Put oatmeal, almond butter, jaggery powder/sugar and flax meal paste in a food processor. Give a few churns.
  4. Throw in spices of your choice.
  5. Add 2-3 tsp of oatmeal if you feel the dough is sticky enough to handle. I added.
  6. Make a log with the dough and cover it with a cling film or aluminum foil.
  7. Preheat the oven (microwave convection) at 180 degrees for 10 minutes
  8. Roll out the cookie dough into a thick chapati.
  9. Cut into desired shapes.
  10. Place on a baking tray and bake for 14 minutes at 180 degrees.
  11. Take out the cookies and allow them to stand on a cooling rack for an hour.
  12. Enjoy eggless, butterless, sugarless cookies with a hot cup of tea.

My Tip:

I added cinnamon to get a spicy flavor.
