Ingredients to make Muskmelon Coconut Pudding

  • Fresh muskmelon pulp 400 gms
  • dessicated coconut 2 tbsp
  • Milk 1/2 litre
  • cashews 4-5
  • almonds 4-5
  • sugar adjust according to the taste of muskmelon
  • ghee 1tsp

How to make Muskmelon Coconut Pudding

  1. In a thick bottom vessel keep milk for boiling on low flame.
  2. Make pulp of muskmelon by blending it in the mixer.
  3. In another vessel take 1 tsp ghee add muskmelon pulp and sugar according to taste.
  4. Saute this pulp for 5-10 minutes and the switch off the gas.
  5. When this pulp mixture comes to room temperature add dessicated coconut and mix it properly.
  6. Keep stirring milk at regular intervals to prevent from getting burnt.
  7. Collect the cream which comes on simmering of milk at the sides of the vessel, in between give a gentle stir mix the cream as well.
  8. Add some dryfruits when milk reduces to half.
  9. Switch off the gas when milk reduces to 1/3 or when it reaches pudding like consistency.
  10. Let the milk cool to room temperature.
  11. When both milk and muskmelon pulp are at room temperature mix them together.
  12. Garnish with dryfruits of your choice.
  13. Refrigerate and serve yummy cool pudding.

My Tip:

Mix milk and muskmelon pulp only after the milk comes room temperature and not before, else, the mixture will curdle.
