Ingredients to make Walnut Shortbread Christmas Cookies

  • 50 gms walnuts
  • 110 gms salted butter, room temperature
  • 50 gms caster sugar
  • 175 gms plain flour, sifted, plus some extra for rolling
  • 50 gms rice flour
  • Icing sugar for dusting

How to make Walnut Shortbread Christmas Cookies

  1. Grind the walnuts very carefully using the 'pulse' switch on a food processor.
  2. place the butter and sugar in a large mixing bowl and cream them together until pale and fluffy.
  3. Now mix the sifted flour and rice flour together and gradually work this into the creamed mixture, a tablespoonful at a time.
  4. Next, add the ground walnuts and use your hands to form the mixture into a smooth dough.
  5. Leave the dough to rest in a plastic food bag in the fridge for 30 minutes, then roll it out on a lightly floured work surface to a round approximately 8 inches in diameter.
  6. Now, using the cookie cutters, cut out the shapes you want, re-rolling the trimmings.
  7. Place them on the lightly greased baking sheet and bake in the pre-heated oven at 150 degrees C for 45 minutes.
  8. Cool them for 5 minutes before transferring to a wire rack. When completely cool, dust them with icing sugar .
  9. You can store these in an airtight container.

My Tip:

These cookies do take a long time to cook but this is done at a low oven temperature to give them the light, crunchy on the outside & melt in the mouth texture. The walnuts add to the flavour of these cookies
