Ingredients to make Apple Bourbon Maple Loaf

  • apple - Bourbon Filling-
  • apple (Granny Smith) - 1 Peeled and chopped up
  • Brown sugar - 50gm
  • butter - 30gm
  • Bourbon - 2-3 tablespoons
  • apple- Bourbon Loaf:
  • flour - 120gm
  • eggs - 2 large
  • butter - 100gm
  • Baking Powder - 1 teaspoon
  • Brown sugar - 100gm
  • apple - bourbon filling - all of it
  • Maple Glaze-
  • Maple Syrup - 2 tablespoons
  • Icing sugar - 75gm
  • Heavy cream - 2 teaspoons

How to make Apple Bourbon Maple Loaf

  1. Apple Bourbon Filling: In a heavy bottomed pan, add the butter, brown sugar, bourbon and apple pieces. Let the butter melt and mix with the other ingredients.
  2. Cook for 5-10 minutes on low heat. Swirl the pan a couple of times so the buttery - bourbon goodness mixes completely with the apple chunks.
  3. Apple - Bourbon Loaf: Preheat the oven to 180 degrees celsius, grease and line the loaf tin with parchment sheet. In a large bowl, cream the butter and brown sugar. Add one egg at a time and beat it.
  4. Sift the flour and baking powder and mix it with the mixture. Fold in the apple - bourbon filling.
  5. Pour the batter into the baking tin. Bake for 25-30 minutes. Check to see if completely baked about using a wooden skewer. Once baked, let it cool on a cooling rack
  6. Maple Glaze: In a bowl, sift the icing sugar to remove any lumps. Add the maple syrup and cream and whisk it until completely mixed.
  7. Add more icing sugar if you like the consistency more thick or add more cream/maple syrup if you want it more runny. Pour the glaze over the loaf and let it chill for 15-20 minutes.

Serve with cup of tea and a dollop of cream on a warm loaf!
