ABOUT Boozy Christmas Brownies RECIPE

Get busy in the kitchen and make these Christmas treats laced with boozy brandy, mixed spice and gooey chocolate.

Ingredients Serving: 4

  1. 2 tbsp Brandy
  2. 2 cups Dark Chocolate, chopped
  3. ¾ cup Butter
  4. 3 eggs
  5. 1 ½ cups Granulated Sugar
  6. ¾ cup all-purpose flour
  7. ¼ cup Cocoa Powder
  8. ½ tsp cinnamon powder
  9. ½ tsp grated nutmeg
  10. ¼ tsp Clove Powder
  11. Pinch of salt
  12. Icing sugar, for dusting

Instructions

  1. Pre-heat oven to 180°C.
  2. Place chopped dark chocolate and butter in a medium bowl. Fill a small saucepan about a quarter full with hot water, then sit the bowl on top so it rests on the rim of the pan, not touching the water.
  3. Heat over low flame until the butter and the chocolate have melted, stirring occasionally to mix them.
  4. Take the bowl off from over the pan. Leave the melted mixture at room temperature to cool down.
  5. While the mixture is cooling, heat brandy in a pan over low flame for 2 minutes. Turn off the gas.
  6. Whip eggs for a minute in a large bowl. Add sugar to the eggs and whip for 3 minutes until all of the sugar has been incorporated.
  7. Add the chocolate-butter mixture and the brandy to the bowl and fold with a spatula until well mixed.
  8. Add sifted flour, cocoa powder, salt and the spices to the wet mixture and fold with a spatula until well mixed and the batter is of ribbon consistency.
  9. Bake for 35-40 minutes or until a toothpick inserted comes out clean. Dust the brownie with icing sugar and serve.
