Walnuts Date and Carrot Cake

Ingredients to make Walnuts Date and Carrot Cake

  • Self raising flour 2 cups
  • baking soda 1.5 tsp
  • dates chopped 2 cups
  • carrots grated 2 cups
  • walnuts broken 1 cup
  • Whisky 1 tbsp
  • Vanilla essence 1.5 tsp
  • cinnamon powder .5 tsp
  • eggs 3
  • Cooking oil 3/4 cups
  • 1/2 cups sugar.

How to make Walnuts Date and Carrot Cake

  1. First beat eggs, oil and sugar in a blender in a pan and keep aside.
  2. Sieve self raising flour, soda and keep aside.
  3. Chop walnuts, and make small pieces of dates and grate carrots. Wash all of them properly with mineral water. Let them dry on tissue paper.
  4. Now gradually fold in the chopped dry fruits and carrots in the egg batter
  5. Use circular method of mixing. Please see that the dry fruits do not break further.
  6. In the meantime keep the oven ready. Preheat for 10 min at 175 degrees C
  7. Now just before putting the batter In the oven add in the whisky, vanilla essence and cinnamon powder. A beautiful flavour of whisky will be felt. An effervescence will be seen and felt after the whisky is added.
  8. Put the cake batter for baking in the pan (desired shape). Ready the baking tray by dusting the flour in the same.
  9. Check the readiness of the cake by inserting a toothpick in the center. It should come out clean if done
  10. Once done remove from the oven and remove from the baking tray .
  11. Can be eaten with hot coffee and fresh fruit cream.

My Tip:

Add whisky only for moisture.
