Plum Cake

Ingredients to make Plum Cake

  • flour 2cups + 2 tbsp (for coating dry fruits)
  • Baking powder 1 1/4 tsp
  • baking soda 1/2 tsp
  • eggs 4
  • butter 200 gm
  • Vanila essence
  • For Spice Powder-
  • 1 small cinamon stick
  • cloves 2
  • cardamom 2
  • sugar 1 cup + 1/2 cup for caramel
  • Fruits and Nuts - cashews 15
  • walnuts 10
  • raisins 15
  • Cranberries 8
  • almonds 15
  • Bluberries 8
  • Tutty Fruity 1 tbsp
  • Rum 1 cup

How to make Plum Cake

  1. Soak all dry fruits and fruits in rum for 2 days .
  2. Preheat oven at 160 degree celcius .
  3. Seperate egg white and yolks .
  4. Beat egg yolks with sugar and butter until smooth and fluffy .
  5. For caramel - Heat 1/2 cup sugar with 1 tbsp water in a pan until dark brown and then add 1/2 cup water to it to dissolve remaining sugar crystals .
  6. Add this caramel to egg yolks .
  7. Add spice mix to egg yolks .
  8. Strain all dry fruits and fruits .
  9. Add remaining rum to egg yolks .
  10. Add vanila essence to yolks .
  11. Sift flour and all dry ingredients at least 3 times.
  12. Fold flour in yolks in three batches by cut and fold method .
  13. Beat egg white untill fluffy .
  14. Mix 2 tbsp flour to dry fruits and fruits to pevent sinking to bottom .
  15. Mix egg white to yolks in three batches .
  16. Mix dry fruits to the batter .
  17. Prepare a cake mould and cover with parchment paper and grease with butter .
  18. Trasfer batter to mould .
  19. Decorate top of batter with flour coated tutty fruity .
  20. Bake it for 50-55 mins at 180 degree celcius .

My Tip:

For better flavour, soak dry fruits for a week .
