Ingredients to make Shahi Anda Masala/Egg Masala

  • 6 boiled eggs cut into half
  • Oninions : 3 cups roughly chopped
  • tomatoes :. 2 cups chopped
  • ginger :. Half inch
  • garlic : 4 pods
  • green chillies : 2-3
  • 6-7 cashewnuts paste
  • curd :. 1 tbsp
  • red chilly powder : 1 tsp
  • Tandoori masala :. 1 tsp
  • Chat masala. :. 1 tsp
  • turmeric :. 1/4 tsp
  • salt :. As required
  • Corriander leaves : 1/2 cup chopped

How to make Shahi Anda Masala/Egg Masala

  1. Make a paste of Ginger, garlic and green chillies and keep aside.
  2. Heat oil and add onions. Fry on medium flame till get lighter brown colour.
  3. Add tomatoes and cook until tomatoes are soft.
  4. Grind to fine paste when becomes cool.
  5. Heat oil & add ginger, garlic, chilly paste and fry for a minute.
  6. Add onion-tomato paste, cashew paste, curd. Keep stirring for 2-3 minutes.
  7. Add turmeric and all masalas.
  8. Add Salt & fry well.
  9. Add eggs n water. Adjust the consistency as desired.
  10. Cover it with lid and let this simmer on low flame for 10 mins..
  11. Sprinkle some coriander leaves on top.
  12. It tastes awesome with plain rice or roties.
