Ingredients to make Apple-tomato soup with crisp salad

  • 2 white onion
  • 2 garlic cloves
  • 300 grams tomato ( cut into chunks)
  • 200 grams apple ( cut into chunks)
  • 2 cup vegetable stock
  • pepper
  • 1/2 table spoon parsley
  • 1/3 tea spoon oregano
  • 1/2 tea spoon thyme
  • 1 cup sprouts
  • 1/2 cup shredded iceberg
  • 1/2 cup diced carrots, capsicum and beetroot
  • salt
  • 1/2 tea spoon tabasco sauce
  • 1/4 cups olives

How to make Apple-tomato soup with crisp salad

  1. Take a pan 1 table spoon olive oil.
  2. Add shredded iceberg,diced carrots,capsicum, beetroot and sprouts to it, toss for 2-3 minutes.
  3. Add Tabasco sauce and salt to it keep aside
  4. Heat 1 tablespoon Olive Oil in another pan Roughly chop the onion and saute for 3-4 minutes until translucent. Mince the garlic cloves, add and saute for another 1-2 minutes.
  5. Add the tomato,apple ,parsley , oregano, thyme and pepper powder and stir so everything is coated, cook for 1-2 minutes then add the vegetable stock and simmer for 30 minutes, until the apple and tomato are completely soft.
  6. Add olives
  7. Using a blender or a stick blender, blend the soup until completely smooth. This soup is very thick as it comes, so if you like your soup a little thinner, add some more vegetable stock until you get the consistency you desire.
  8. Top it with the sprouts and vegetables salad we made for it
  9. Serve with the remaining salad.
