Lasagna Soup

Ingredients to make Lasagna Soup

  • 4 noodles of lasagna; broken into bite sized pieces
  • 1/2 cup of mozzarella
  • 200 gm lamb mince
  • 1 tsp Oregano
  • 1 large onion ; finely chopped
  • 2-3 garlic cloves ; finely chopped
  • 3 tbsp olive oil
  • 1 tsp red chilli flakes
  • 1 tsp crushed black pepper
  • 2 large fresh tomatoes ; blanched and pureed
  • 3 tbsp tomato paste
  • Freshly chopped parsley
  • 1/4th Grated parmesan cheese

How to make Lasagna Soup

  1. Heat up the olive oil in a deep pot. Add the chopped onions and garlic and saute till the onions are nearly browned.
  2. Add in the mince along with cumin powder, chilli flakes, crushed black pepper and oregano.
  3. Next, add in the tomatoes and tomato paste and let it simmer for about 20 mins.
  4. After 20 mins, it is time to add parmesan and broken lasagna noodles along with a cup of water.
  5. Let it simmer for another 15 mins or till the water has been reduced fairly and the noodles cooked.
  6. Take it out in bowls and during serving, sprinkle mozzarella cheese and parsley flakes.
