Pineapple cutlets

Ingredients to make Pineapple cutlets

  • Boiled and mashed potatoes 1 cup
  • Bathua leaves 1 cup
  • Dried breadcrumbs 1/2 cup
  • salt 1/2 tsp
  • red chilli powder 1/4 tsp
  • Chat masala 1/2 tsp
  • Finely chopped pineapple 1/3 cup
  • cabbage leaves for garnishing

How to make Pineapple cutlets

  1. Wash and chop bathua leaves.
  2. Boil in open water for 5 minutes. Drain, cool and squeeze tightly.
  3. In a mixing bowl, add all ingredients for cutlet and mix well.
  4. Divide in 6 portions.
  5. Mix 1 tbsp dried breadcrumbs in chopped pineapple.
  6. Stuff each cutlet portion with 1 tsp pineapple and shape into a triangle with slightly round edges and flat top.
  7. Mark criss cross pattern using a butter knife.
  8. Air fry for 10 minutes.
  9. Separate cabbage leaves and cut to shape pineapple leaves using a scissor.
  10. In platter arrange cutlets with cabbage leave and serve with ketchup and mint chutney.

My Tip:

Cutlets can be baked or deep fried too.
