Amso (Chicken Stew With Rice Flour)

Ingredients to make Amso (Chicken Stew With Rice Flour)

  • Chicken - 500 gms medium cut
  • Green Chillies - 4-5 or as per taste
  • Tomato - 1 chopped (optional)
  • Ginger - 2 inches
  • Garlic - 6-7 cloves
  • Bamboo Shoots - 2 tbsp or as per taste
  • Rice Flour - 3 tbsp
  • Salt to taste
  • Water - 3 cups or as required
  • Few chopped coriander leaves (optional)

How to make Amso (Chicken Stew With Rice Flour)

  1. Coarsely ground the green chillies and keep aside.
  2. Take the ginger and garlic and coarsely ground them and keep aside.
  3. In a pan add the chicken.
  4. Add water, coarsely grounded green chillies,tomatoes, salt and bring to boil and cook for about 10 mins.
  5. Add coarsely grounded ginger garlic, Bamboo Shoots and cook for another 10 mins. Add water if required and adjust the gravy consistency.
  6. Mix the rice flour in little water and add it to the chicken.
  7. Stir continously so it doesn't form any lumps and cook for 3-5 mins.
  8. The gravy will thicken, check salt, add chopped coriander leaves and take off the heat.
My Tip: Adding Tomato is optional here if you are using bamboo shoots. Coriander leaves is optional here. If you can source ginger leaves you can add 2-3 leaves crushed. Since bamboo shoots is not easily available or sourced you can opt that with tomatoes.
