Carrot rice

Ingredients to make Carrot rice

  • 2 cups carrot puree
  • 1 cup rice
  • 10 cashew nuts
  • 2 green cardamom
  • 2 cloves
  • 1 piece cinnamon
  • 10 Black peppercorns
  • Some green coriander leaves for garnishing
  • 1/2 teaspoon ginger paste
  • 1/2 teaspoon garlic paste
  • salt to taste
  • sugar to taste.
  • 1/2 cup water
  • 2 tablespoons of ghee
  • 1/2 teaspoon of haldi powder
  • 1/2 teaspoon jeera powder

How to make Carrot rice

  1. Heat ghee on a kadai
  2. Put in the whole spices( cardamom,cloves, cinnamon ,black peppercorns and the cashews.
  3. Add the carrot puree
  4. Stir and cook for five minutes
  5. Add in salt ,sugar,jeera powder and haldi
  6. Cook for five minutes
  7. Add ginger paste and the garlic paste cook.
  8. Add the rice and stir well.
  9. Add water and cover. Cook until the rice is done.
  10. Open the lid and shake up the rice. Add the chopped green coriander.
  11. Serve hot with any curry of your choice. This can be eaten simply with any raita.
