Mini Chocolate cheesecake(baked)

Ingredients to make Mini Chocolate cheesecake(baked)

  • cream cheese - 675g
  • Granulated sugar - 150g
  • Large egg(3) - 150g
  • Sour cream - 57g
  • Heavy cream - 3tbsp
  • Couverture Chocolate - 226g
  • Vanilla extract - 1tsp
  • Oreo cookies - 1 pack
  • Melted butter - 1tbsp
  • sugar - 2tsp

How to make Mini Chocolate cheesecake(baked)

  1. Mix Oreo cookies without cream With melted butter and sugar in a mixer and beat till crumbs.
  2. Now line the muffin cups in a tray and press crumbs firmly with a spoon. Freeze it till your batter is ready.
  3. Cream the softened cream cheese till smooth and add sugar mix till smooth.
  4. Add only one egg at a time. Mix just till incorporated. Over beating will lead to cracked top.
  5. Scrape the sides of the bowl for even mix. Add sour cream and heavy cream together. Mix till smooth.
  6. Add melted chocolate finally. Mix smooth. Tap on a firm surface to release the air inside. Pour on the muffin cups.
  7. Bake in a water bath at 180c for 15-20min. Cheesecake is done when the top jiggles when u shake it and little dark spots along the edges.
  8. After its done, let the oven door crack open and leave cake inside for 30 min and then on stove top. Chill it for 2 hrs before serving. Serve with fresh cream or ganache.

My Tip:

All ingredients must be in room temperature. It can be stored in fridge for 3 days and in freezer for 2 weeks.
