The Quintessentially Indian Gaajar Ka Halwa..

Ingredients to make The Quintessentially Indian Gaajar Ka Halwa..

  • carrots peeled and grated 2 kg
  • Condensed milk 1 can
  • sugar 1/2 cup
  • cardamom powder 1 tbsp
  • Milk 3/4th litre
  • Dry fruits like almond and cashewnuts slivered 1 cup
  • Ghee or butter 3/4 th cup
  • Fresh cream 100gm
  • mawa / Khoya 1 cup
  • 2-5 saffron threads dissolved in 2 tbsp of milk

How to make The Quintessentially Indian Gaajar Ka Halwa..

  1. Wash and grate your carrots and set aside .
  2. Put the grated carrots in a , preferably , non stick pot . Mix in the milk well before putting it on a low flame for 20-25 mins .
  3. Occasionally , keep stirring . At the end of the duration , see to it that there is no raw smell left and that it looks cooked .
  4. At this point , add in the sugar , condensed mik , saffron , half of the dry fruits , cardamom powder and ghee .
  5. Let this sit on flame for another 10-15 mins .
  6. Let it cool down a bit .
  7. Before serving , mix in some fresh cream . Also , sprinkle the remaining dry fruits and serve with some shredded khoya .
