Ingredients to make Rajgira paratha

  • Rajgira flour-1 and half cups
  • potatoes-5( boiled and mashed)
  • ginger green chilli paste-1 tbsp
  • sendha namak-1 tsp
  • Black pepper-1 tsp
  • cumin Powder-1 tsp
  • curd-1 tbsp

How to make Rajgira paratha

  1. Mix rajgira flour with mashed or grated boiled potatoes,and rest of the ingredients.
  2. Knead a soft dough.Apply some oil and keep for 10 minutes.
  3. Now take a ziplock bag or a plastic sheet on which we have to apply some oil and take a ball of this dough.cover with plastic and roll lightly into a round shape.Since this is a gluten free flour it is difficult to roll like a chapati.
  4. Apply some oil on tawa,preferably groundnut oil if you are preparing for fast.
  5. Put the rolled paratha on the hot pan and let it roast till some brown spots apoear on lower side,then flip it.Apply oil on sides.After it is cooked on second side,again flip and press with spatula for evwn browning.
  6. Serve with dry potatoe vegetable or curd.

My Tip:

If you don't want to add potatoes,you can knead the dough with warm water and make parathas or puris from this dough. You can also make the parathas with ghee.
