Moghlai parota is one of the popular street food in kolkata..rectangular shape parota stuffed with spiced egg mixture and deep fried.it can be stuff with chicken and mutton too.bengali s are just die heart fan of this moghlai parota.

Ingredients Serving: 3

  1. For daugh
  2. Maida refine flour - 1cup
  3. Salt - 1/4 tsp
  4. Oil - 1 /2 tbsp
  5. For stuffing
  6. Egg - 2
  7. Chopped onion - 1
  8. Garlic - 3 chopped
  9. Coriander leaves - one handful ,chopped
  10. Green chilli - 1 /2 ,chopped
  11. Turmeric powder - 1/2 tsp
  12. Chilli powder- 1/2 tsp
  13. Salt to taste
  14. Roasted chana dal powder- 2 tbsp ( roaste Chana dal with 1/4tsp oil till light brown.then put in a grinder and grind into powder.

Instructions

  1. Take a bowl .add Maida. Salt and oil .mix Well.now add Water gradually and knead a soft smooth daugh..cover it with wet cloth for 20 mins. For stuffing ---- Add 1 egg into a bowl along with 1 tbsp chopped onion ,1/2 tsp minced Garlic ,Salt to taste ,1 tbsp coriander leaves ,1/2tsp turmeric and 1/2 tsp chilli powder,1 tbsp roasted chana dal powder..mix well everything.
  2. Heat a pan with enough oil for deep frying.
  3. Clean your kitchen top..spread some oil on the kitchen top.
  4. Now take big size ball from the daugh.
  5. Roll it with the help of some oil. Roll it a big and thin as possible but not like paper thin so it can not hold the egg mixture.
  6. Now fold the two opposite side (lengthwise)
  7. Put the egg mixture into the centre. Spread little.now fold the another opposite sides so it completely cover the filling inside.
  8. Now it will look like a rectangular envelope.
  9. Lift parota carefully. Put it into the medium hot oil.
  10. Fry muglai parota both sides till golden brown.
  11. Take out from pan .place it on a paper towel .
  12. Serve muglai parota with spicy dry potato curry and onion lachha.
