Mini Khoba Roti/Rajasthani Roti

Ingredients to make Mini Khoba Roti/Rajasthani Roti

  • Whole wheat flour -2cups
  • Carom seeds -1/8 teaspoon
  • chilli powder -1/2 teaspoon
  • Black pepper powder-1/2 teaspoon
  • ghee -2 tablespoons for dough plus extra for cooking roti
  • fenugreek seeds-roasted and powdered -1/8 teaspoon
  • water -for kneading the dough
  • salt- as needed

How to make Mini Khoba Roti/Rajasthani Roti

  1. In a wide bowl,take the wheat flour,chilli powder, pepper powder,carom seeds and fenugreek powder and salt. Mix well.
  2. Add the 2 tablespoons ghee and mix.
  3. Add water gradually kneading to a soft and pliable dough.
  4. Cover with a damp muslin cloth and set aside for 30 minutes.
  5. Divide the dough into 6 parts.
  6. Roll out each into a thick roti.
  7. Starting from the centre,pinch the surface of the roti all over to make the pattern. Pinch only on one side.
  8. Put a girdle pan on low heat, place the roti design side up. Drizzle ghee over the sides.
  9. When the side is golden,turn over, drizzle ghee and cook the other side till well cooked and golden.
  10. Repeat for the other rotis. Serve hot!

My Tip:

In the book, Chef Vikhas Khanna haf rolled out two big rotis by dividing tge dough in half. I made mini rotis so its up to you. Both ways its absolutely tasty!
