ABOUT Kakinada Gottam Khaja RECIPE

As the name says,it is a sweet delicacy from the place called Kakinada in Andhra pradesh.The word "khaja" originated from Arabic meaning sacred or pure.Kakinada kaja is just a replica of Ranchi khaja. kaja a puffy pastry strip soaked in sugar syrup literally melts in mouth.

Ingredients Serving: 10

  1. 1.5 cups - All purpose flour
  2. 2 tbsp- Gram flour
  3. 1/8 tsp- Baking soda
  4. 2 tbsp - Butter
  5. Oil for Deep frying
  6. 1.5 cups - Sugar
  7. 2.5 cups - Water
  8. 1 tsp - Cardamom powder
  9. Pinch of saffron (optional)

Instructions

  1. Sift the flours and soda into a bowl. Add the butter and work with your fingers until well incorporated.
  2. Adding water knead this into a soft dough.Transfer the dough on a working surface and knead for 5 minutes.
  3. Cover the dough and rest it for 3 hours minimum.
  4. Later divide the dough into 3 equal portions and roll out each dough ball into 15 cm long strip.Pat its top to form a rectangular like strip.
  5. Cut this into 6 to 7 equal portions. Roll out each piece into a 3 inch strip.
  6. Repeat and make the rest of the dough in the same manner.
  7. Meanwhile, start with the sugar syrup by adding sugar and water to a deep pan.Bring this to boil until it attains one string consistency.
  8. Once it reaches the stage add cardamom powder and saffron. Stir well and turn off the heat.
  9. Heat oil in a deep pan until moderately hot. Add 4 to 5 strips at a time and fry until golden on medium high.
  10. Drain out excess oil and add the fried to the sugar syrup. Let them sit in syrup for atleast an hour before serving.
  11. Soft and mouth melting authentic Kakinada Khaja is ready to enlighten your moods. Serve
