Oven Roasted Baingan ka bharta

Ingredients to make Oven Roasted Baingan ka bharta

  • 2 Baingan(bharta variety)
  • 2 medium size onion fianlly chopped
  • 3-4 medium size tomatoes chopped
  • 4-5 garlic cloves chopped or grated
  • 1/2 inch ginger grated
  • 4-5 green chilli finally chopped
  • 6 tbsp mustard oil
  • 2 tsp kashmiri red chilli powder
  • 1 tsp garam masala
  • 2 tsp coriander powder
  • salt as per taste
  • 1 tsp Lemon juice
  • 1 tsp turmeric powder
  • 1 tbsp fresh coriander chopped
  • Water if required

How to make Oven Roasted Baingan ka bharta

  1. First wash baingan and slit it and grease it with oil on all sides
  2. Preheat oven at 180'C and roast baingan for at least 35 to 40 minutes or till baingan become soft and a nice roasted aroma emanates
  3. Take it out and let it cool. Remove the skin and mash it
  4. Take all the ingredients after mashing the roasted baigan
  5. Now heat oil in a pan add cumin seeds and add Ginger garlic paste
  6. Saute it till it becomes brown in colour.
  7. Add chopped Onion and green chilli
  8. Saute it till onions tender and brown. Add tomatoes
  9. Add all spices and mix well till tomatoes become soft and tender and gravy leave oil from all sides
  10. Add mashed baingan and mix well
  11. Cover and cook it till baingan absorbs all spices and leaves oil
  12. Yummy spicy tangy baingan ka bharta is ready. Sprinkle lemon juice over it and garnish it with fresh coriander. serve hot with hot chapati, naan ya kulcha.

My Tip:

Baingan ka bharta is awesome in flavour. Cook it in mustard oil for added flavour and adjust spices according to taste.
