Ingredients to make Sikandari Raan

  • Whole leg of Lamb - 1 1/2 Kgs Aprox.
  • For the marination; 125 grams yogurt.
  • 3 table spoons each ginger and garlic paste.
  • 5 teaspoons red chili powder.
  • 1 teaspoon garam masaala.
  • 2 teaspoons green cardamon seeds powder.
  • 5 to 6 teaspoons coriander powder.
  • 20 whole black pepper corn.
  • 1 teaspoon of powdered javitri ( Mace ).
  • 50 grms Khoya
  • 3 teaspoons salt.
  • 90 ml dark rum .
  • 4 tbs ghee
  • oil for frying onions
  • 4 large onions peeled and sliced length wise

How to make Sikandari Raan

  1. Clean the mutton and make deep incisions 2-3 on each side .Make the marinade with all the ingredients other than the ghee and onions.
  2. Marinate the leg pushing the marinade deep into the cuts and spread all over on both sides. Refrigerate for 12-24 hours .
  3. When you are ready to cook , fry onions till they are golden brown , drain oil and make a paste. Mix into the marinated leg of lamb .
  4. Place the leg in a wide oven proof dish. Heat the ghee / oil - pour over the leg and sides.
  5. Cover with foil. Bake at 170 C for 3 hours , basting the leg with the marination every half an hour.

My Tip:

The longer the marination the softer it is.
