#Malai Kulfi In Sevai Basket

Ingredients to make #Malai Kulfi In Sevai Basket

  • For sevai basket-
  • Sevai/vermicelli 1 cup
  • Water as needed
  • Sugar 1/3 cup
  • For kulfi -
  • Milk 1 cup
  • Milk powder 2 tbsp
  • Sugar 3 tbsp
  • Fresh cream/malai 2 tbsp
  • For garnishing -
  • Chopped dry fruits 1/4 cup
  • Chopped fresh fruits

How to make #Malai Kulfi In Sevai Basket

  1. For kulfi boil milk in a heavy bottomed pan.
  2. Cook milk on sim till it reduces to 1/3. Keep stirring occasionally.
  3. Add sugar and milk powder. Mix well. Cook for 2 minutes more.
  4. Remove from heat and add fresh cream/ malai in reduced milk well.
  5. Cool down and then refrigerate till set. Approx 6-8 hours.
  6. For sevai roast sevai on low flame with 1 tsp ghee.
  7. Add water enough to soak sevai well. Not more than that.
  8. Cook covered on sim for 2-3 minutes till water dries up and sevai swells up well.
  9. Add sugar, mix and cook covered for a minute.
  10. Now take some cupcake moulds or small bowls and line them with sweet sevai arranging sevai at bottom and walls of cup.
  11. Let them sit for 15-20 minutes. Then demould .
  12. Fill these sevai cups with a scoop of kulfi.
  13. Top with some nuts and fruits.
