Wholewheat-Ragi Dark Chocolate Biscotti

Ingredients to make Wholewheat-Ragi Dark Chocolate Biscotti

  • 3 small eggs
  • 120 gms sugar (grain)
  • 1 tsp vanilla extract
  • Almond Extract (few drops)
  • 120 gms whole wheat flour (you can use maida/all-purpose flour if you are fine with that)
  • 40 gms ragi flour
  • 25 gms cocoa powder
  • 200 gms whole almonds
  • 100 gms dark chocolate (chopped)

How to make Wholewheat-Ragi Dark Chocolate Biscotti

  1. Assemble all ingredients.
  2. Break eggs into the mixing bowl of your stand mixer. Add sugar, vanilla extract, almond extract and salt.
  3. Whip the ingredients till the mixture rises in volume, is pale yellow in colour and has a ribbon consistency.
  4. Add the sifted flour, cocoa and soda mixture to the beaten egg mixture.
  5. Fold in the almonds and chocolate
  6. Spread over a parchment paper-lined baking tray, lengthwise.
  7. Bake at 150°C for at least 45 min to 1 hour.
  8. Allow to cool slightly.Slice into pieces of ½-inch thickness.
  9. Reduce the oven temperature to 130°C and bake till dry. Cool off and eat!

My Tip:

Why Ragi - because its one of the healthiest flours and it gives a chewy texture to the Biscotti unlike a traditional biscotti ! Kids love it :)
