Banana Cranberry Cake

Ingredients to make Banana Cranberry Cake

  • butter - 250 gms
  • sugar - 200 gms
  • Ripe bananas - 1 cup (mashed)
  • all purpose flour - 100 gms
  • whole wheat flour - 150 gms
  • eggs - 5
  • Cranberries - 3/4 cup
  • Baking powder - 1 tsp
  • baking soda - 1/2 tsp
  • Salt 1/8 tsp (if using unsalted butter)
  • Vanilla essence - 1 tsp
  • For salted caramel:
  • sugar - 75 gms
  • Salted butter - 50 gms
  • Heavy cream - 50 ml

How to make Banana Cranberry Cake

  1. Grease and dust a 9-10' bundt or ring pan.
  2. Bring butter to room temperature.
  3. Whisk butter and sugar till light and fluffy
  4. Add eggs one at a time, beating well after each addition.
  5. Add the bananas, cranberries and vanilla. Beat well.
  6. Sift together the flours, baking powder, baking soda and salt twice.
  7. Add this mix to the eggs and butter mix gradually. Fold In carefully.
  8. Pour in the prepared pan and bake in the preheated oven for approx 40 minutes or till done.
  9. After cooling a bit, remove from pan and drizzle with salted caramel glaze.
  10. To make the salted caramel:
  11. Melt the sugar on low heat till it caramelizes.
  12. Add the salted butter and mix well.
  13. Next add the cream and bring to a boil. Drizzle over the cake.

My Tip:

Make sure you beat the butter and sugar really to get the softest possible cake.
