Ingredients to make khoya jalebi ( Madhyapradesh style )

  • Mawa/khoya 200 gm ( I have used homemade mawa, as it is safe for our health. Recipes of homemade mawa are available on Better Butter ).
  • All purpose flour ( Maida ) 100 gm
  • Water as required
  • Saffron strands 12-15
  • Milk 3 tbsp
  • 2 Almonds for garnishing
  • Refined oil/ghee as required ( If u r using oil, add 1 tbsp of ghee, it gives a better flavour )
  • For Sugar syrup :-
  • Sugar 2 cup
  • Water 1 cup
  • 5-6 saffron strands

How to make khoya jalebi ( Madhyapradesh style )

  1. Preparation of batter :- Take Maida in a big bowl. Add water little by little..
  2. Grind it in a mixer to make lumpfree batter. Consistency should be thick yet flowy. It should not be too thin. Cover batter with lid, Keep aside.
  3. Khoya preparation :- Grate the Mawa/khoya.
  4. Take 3 tbsp milk in a bowl, add 15 saffron strands. Mash well..
  5. Add this milk to khoya and mix well to make it soft.
  6. Mix maida and khoya together in a grinder and grind it to form a Jalebi batter. Consistency,-flowy and medium thick. If u feel batter is not proper thick add little maida or water accordingly and mix well. Keep this mixture aside for 2 hours.
  7. After 2 hours :- Mix well jalebi batter and start to prepare sugar syrup.
  8. Sugar syrup preparation :-. Heat a pan. Add ingredients mentioned under Sugar syrup and stir well to make the syrup.
  9. Prepare One thread sugar syrup ( put a drop of syrup in a plate. When little cools, Touch it with the tip of ur forefinger. Touch ur forefingure with ur thumb and pull apart slowly. It should form one string. This is our one thread sugar syrup. ) And turn off the gas.
  10. Make a cone from plastic paper and fill the batter into it
  11. Start preparing Jalebies in a pan and deep fry on low heat.
  12. When starts colouring from below turn them and fry till both sides golden brown. Keep flipping them it between. Drain excess oil and drop them into sugar syrup.
  13. After two minutes turn the sides and then after 2 minutes take them out in a plate.
  14. Thus fry all Jalebies, garnish with dryfuits and serve.
My Tip: Jalebi batter should not be watery or too thick. Heat oil well n then fry on simmer, U can slightly increase heat.
