Ingredients Serving: 4

  1. Potatoes - 500 gm
  2. Sugar - 125gm
  3. Ghee -100 gm
  4. Khoya - 125gm
  5. Cloves - 2 pcs
  6. Green cardamom - 2pcs
  7. Yellow food colour - 1 teaspoon
  8. Grated coconut - 10gm
  9. Sliced almonds 8-10pcs
  10. Sliced pistachios - 8-10 pcs
  11. Water - 500 ml

Instructions

  1. Grate the potatoes and keep aside.
  2. Take 500ml water in a vessel.
  3. Add in the yellow food colour.
  4. Turn on the flame and bring to boil.
  5. Once the water starts boiling add in the grated potato.
  6. Cover and boil for 2 minutes.
  7. Now drain the water completely and keep aside the boiled potatoes.
  8. In another vessel heat ghee.
  9. Add in the cloves and cardamom.
  10. Once they crackle add in the grated boiled potatoes.
  11. Add in the sugar.do not stir.
  12. Cover and cook on low flame until sugar melts.
  13. Now open the lid and lightly mix so that the sugar dissolves evenly.
  14. Now add in the khoya and few sliced nuts.mix well.
  15. Cover the lid and let the zarda simmer for 5-7 minutes or until potatoes become soft.
  16. Transfer into serving plate.
  17. Garnish with the remaining sliced nuts and grated coconut.serve warm.
