Ingredients to make Pulihora

  • for cooking rice
  • Rice 1/2 cups
  • Water 3 Cups
  • For tamarind paste
  • 35 gms tamarind soaked in water for 1/2 hr
  • 1/4 tsp mustard powder (dry roast)
  • 1/4 tsp jeera methi powder (dry roast)
  • Small piece of jaggery
  • 1 tbsp sesame powder (dry roast )
  • 2 green chilli
  • 1/2 tsp Turmeric
  • 2 springs curry leaves
  • 1/4 tsp dry ginger powder or 1/4 inch fresh ginger julienne
  • 1 tsp oil
  • Salt 2 tsp
  • For Seasoning
  • 3 tbsp oil
  • Mustard seeds 1/4 tsp
  • jeera 1/2 tsp
  • Urad 1/2 tsp
  • Chana dal 1/2 tsp
  • Peanut few
  • Cashew few (optional )
  • 2 green chilli
  • 2-3 dry chilli
  • A pinch of hing (asafoetida )

How to make Pulihora

  1. Cook rice it should be fluffy and not sticky let it cool down completely, take a big plate and try spreading it
  2. For tamarind paste
  3. Soak tamrind in water dont add too much water to make the paste it should be a thick paste
  4. Grind mustard,jeera,methi
  5. Cook ur tamarind paste until thickens using all ingredients mentioned in tamarind paste
  6. For seasoning
  7. Let ur oil heat up well add mustard seeds ,jeera, chanadal,urad dal,peanuts,cashew one by one until they r browned, add green chilli,curry leaves and dry chilli let them roast well at last add hing
  8. Assembling Take ur rice add tamarind paste and seasoning using ur hand mix thoroughly.
  9. And tada ur pulihora is ready.
My Tip: U can prepare ur tamarind paste a day ahead ,see ur rice is not sticky
