Potato Rice

Ingredients to make Potato Rice

  • Pre cooled rice - 1 1/2 cup
  • Potatoes - 3
  • Turmeric powder - 1 tsp
  • Red Chilli Powder - 2 Tsp
  • Asofoetida - a pinch
  • Salt to taste
  • Mustard seeds - 1 tsp
  • Curry leaves - a few
  • Ghee - 2 tsp
  • Oil - 1/2 tbsp

How to make Potato Rice

  1. In a pan, heat a little oil and temper with mustard seeds, curry leaves and asafoetida.
  2. Add the diced potatoes, turmeric powder, red chilli powder and salt and mix well.
  3. Sprinkle a little water so the spices don't burn.
  4. Cover and cook this until the potatoes are done, stirring in between.
  5. Once the potatoes are almost done, open the lid and let it crisp up just a little bit.
  6. To this add a little ghee, mix well and turn off the heat.
  7. Add the pre cooked rice and mix well.
  8. Serve with papad or raita.
