Maharashtrian Style stuffed Okra / Lady Finger

Ingredients to make Maharashtrian Style stuffed Okra / Lady Finger

  • Bhindi 500 grams
  • oil 2 tbsp
  • Mustard seeds 1 tsp
  • Cumin seeds 1 tsp
  • Grated Coconut 1/2 cup
  • Roasted Skinless Peanuts 3/4th cup
  • Garlic 4-5 pods
  • Red Chili Powder 1 Tsp
  • Salt to taste
  • coriander powder 1 tsp
  • Curry leaves 12

How to make Maharashtrian Style stuffed Okra / Lady Finger

  1. Ground peanuts along with garlic and red chili coarsely in grinder.
  2. Heat 1 tsp oil in a work.Fry grated coconut, ground peanut and little salt for 4-5 minutes on low flame.
  3. Allow mixture to cool down completely.
  4. Wash and pat dry bhindi properly.
  5. Remove the head and pointed tail of bhindi and make a deep long slit in the center.
  6. Make horizontal slit and regular intervals.
  7. Fill the bhindi with the stuffing which you have made earlier.
  8. Now starts the cooking process.
  9. Heat remaining oil in a flat and big non stick pan.
  10. Add curry leaves and mustard seeds.
  11. Add cumin seeds, turmeric powder, coriander powder and stuffed bhindi in the pan.
  12. Add little more salt.
  13. Cover and cook till done.
  14. Serve Hot with Rice and Daal.
My Tip: Use small size Okra
