Chocolate Mousse

Ingredients to make Chocolate Mousse

  • 250ml milk
  • 85g egg yolks
  • 45g castor sugar
  • 7g gelatine
  • 120g Belgian dark chocolate (64%)
  • 270 ml whipping cream whipped.
  • 500 g fresh raspberries

How to make Chocolate Mousse

  1. Prepare an anglaise with the milk, yolks and sugar.
  2. Add the gelatine and pour over the dark chocolate and homogenise to obtain a smooth mixture.
  3. Let this mix come to 31 degrees Celsius.
  4. Gently fold the whipped cream to obtain a rich and smooth chocolate mousse.
  5. Fold in the fresh raspberries.
