Ingredients to make Bendekai Saru/ lady's finger sambar

  • Salt
  • Tamarind pulp
  • To fry:
  • oil
  • Chopped lady's finger
  • To temper:
  • oil
  • 2 teaspoon finely chopped onion
  • To Grind:
  • 1/2 coconut Grated
  • 2 Medium Onions
  • 2 medium tomatoes
  • Little coriander leaves
  • 2 to 3 tablespoons of sambar powder

How to make Bendekai Saru/ lady's finger sambar

  1. In a pan add oil and chopped lady's finger and fry till the stickness of it is out completely. Keep it aside.
  2. Grind all the ingredients to a fine paste under section "to grind".
  3. In a pan add oil, finely chopped onion and fry. Now add the grinded mixture and add sufficient water (sambar consistency). Allow it to boil for 15 minutes or until the masala is cooked completely.
  4. Then add salt, tamarind pulp and cook for 5 minutes.
  5. Add the fried lady's finger and cook for 5 more minutes. Check for the taste.
  6. Serve it with hot rice and ghee.
My Tip: Use fresh lady's finger. Make sure sambar consistency is there. Dont make it too thick or thin
