Easy Chicken Roast

Ingredients to make Easy Chicken Roast

  • 1 kg Chicken chopped to medium-sized pieces with bones
  • For the Marination:
  • 4tbsp Curd/Yoghurt
  • 3tbsp Red Chilli Powder
  • 3tsp Tandoori Chicken Masala
  • 1tsp Turmeric
  • 2tbsp Mix of Dhania and Jeera Powder
  • 3 Green chillies (broken into 2 pieces)
  • 1tsp Garam Masala
  • Salt to taste
  • 2tbsp Oil
  • 2-3tsp Coriander
  • 3 Stalks Curry Leaves
  • For Tempering :
  • 1tsp Oil
  • 2-4 Curry Leaves
  • 3-4 Chopped Cashewnuts
  • 1 Onion chopped into chunks

How to make Easy Chicken Roast

  1. Wash the chicken and marinate with the ingredients used for marination. Cover and keep it in the refrigerator for at least an hour.
  2. Now take a pressure cooker and cook the marinated chicken for 1-2 whistles. Do not add any water.
  3. Open the pan after the pressure is released and dry the excess juice on high flame. Do not stir at all
  4. Once the juices are dried up mix gently with a wide spatula.
  5. Reduce the flame to medium and continue roasting.
  6. Take a wide non stick pan and start with the tempering
  7. Add a tsp of oil, add cashew nuts, stir and roast till it turns golden brown. Now add the onion chunks
  8. Stir fry on high and add curry leaves
  9. Now transfer the chicken to this pan and mix gently
  10. Leave on low flame for few mins
  11. your delicious Chicken Roast is ready to serve with hot rice and dal.
