Ingredients to make Veg Makhanwala pulao

  • Basmati Rice 2 cup soaked in water for 30 minutes
  • Cloves 5
  • Bay leaves 2
  • Green cardamom 4
  • Black cardamon 1
  • Peppercorns 4
  • Cinnamon 1 inch long
  • Salt 1 tablespoon
  • Oil 1 teaspoon
  • For veggies:
  • Carrots chopped 1 cup
  • Green Peas 1 cup
  • Potato 1 chopped
  • Cauliflower chopped 1/2 cup
  • Soya nuggets soaked 1/2 cup
  • Bell peppers red, yellow, green mixed 1/2 cup
  • Butter 4 tablespoons
  • Salt to taste
  • Green chilli 4 ( according to your taste)
  • Jeera 1 tablespoon
  • Garam masala 1 tablespoon
  • For Tempering:
  • Onion chopped 1 large
  • Ginger chopped 2 inch long
  • Garlic 6 pods chopped
  • Tomato chopped 2 medium
  • Coriander and mint leaves for garnishing.

How to make Veg Makhanwala pulao

  1. Pour water into a pan and add all dry masalas, Add salt and oil. When water starts boiling add rice. Cook it till it's done. Drain excess water and set aside.
  2. Remove all khada masala from rice.
  3. Now take another pan and add butter to it. Put all chopped vegetables to it and fry them in low flame with covered lid till they cooked. Stir occasionally.
  4. Now remove these veggies from pan and add butter for tempering.
  5. Add jeera, chopped onion, ginger, garlic and Green chilli. When onion becomes translucent add chopped tomatoes​. And roast it properly.
  6. Now add salt and garam masala, mix it properly. Add fried veggies to it. Mix well and cook for two minutes.
  7. Now add cooked rice to it and mix properly.
  8. Cook it with covered lid on low flame for 5 minutes.
  9. After this garnish it with coriander and mint leaves. Your veg makhnwala pulao is ready. Serve it with raita.
