Grilled Salad Satay

Ingredients to make Grilled Salad Satay

  • 1/2 cup carrot cut in chunks
  • 1/2 cup baby corn cut in chunks
  • 8-10 mushrooms cut in chunks
  • 1 cucumber cut in stripes
  • 2-3 tsp peanuts
  • 2 tsp sour cream
  • 1 1/ 2 tsp harissa sauce
  • 1 tsp roasted cumin powder
  • 1/4 tsp cinnamon powder
  • Pinch of nutmeg powder
  • 1 tsp lemon juice for marination and 1 tsp for cucumber stripes
  • 2 tsp mint leaves
  • 2 tsp olive oil, salt to taste
  • 6-8 bamboo sticks (skewers)

How to make Grilled Salad Satay

  1. Cut all vegetables in optimal sized chunks.
  2. In large mixing bowl add all dry powder, sauce, sour cream, lemon juice, salt and olive oil and mix well, now add vegetables in it and toss well and keep it for marinate for 10-15 min in refrigerator.
  3. After 15 min arrange the marinated vegetables chunks in skewers, now heat a nonstick pan and place this vegetable sticks in it and grilled in pan for 4-5 min.
  4. In serving plate, place the cucumber stripe, sprinkle some lemon juice and salt over it and keep grilled vegetables sticks over it.
  5. After grilled in the same pan roast the peanuts and keep it in serving plate.
  6. Now serve this grilled salad with roasted peanuts, mint leaves and lemon wedges.

My Tip:

Prepare the step of marination and keep it in fridge,at time of serving grilled this.Not fully cook,keep crunchyness in vegetables.
