Butter Chicken

Ingredients to make Butter Chicken

  • boneless chicken 1 Kg
  • butter 500 grams
  • 2 tbsp oil
  • onion paste 2 tsp
  • onions 2 (chopped)
  • garlic paste 1 tsp
  • ginger paste 1 tsp
  • red chillies 4-6
  • mace powder 1 tsp
  • red chilli powder 1 tsp
  • coriander powder 1 tsp
  • yoghurt 1/2 cup
  • tomatoes 5-6
  • crushed kasoori methi 1.5 tsp
  • coriander seeds 2 tsp
  • 2 black cardamom
  • 3 green cardamom
  • 2 bay leaves
  • 2 cinnamon (crushed)
  • 3tbsp fresh cream
  • salt to taste
  • green chillies 4 to 5 (slit)

How to make Butter Chicken

  1. In a large bowl, mix the yoghurt, onion paste, green chillies, ginger-garlic paste, sugar, salt, green and black cardamoms, mace powder. Add the raw chicken. Marinate overnight.
  2. Roast the marinated chicken in a tandoor or an oven till its 3/4th done.
  3. Heat butter with dalda in a pan. Add bay leaves, cloves, cinnamon, red chillies and crushed coriander seeds. Sauté for half minute.
  4. Add a bit of onion, red chilli powder, coriander powder and tomatoes. Sauté for 5 minutes. Puree the mixture in a blender.
  5. Heat the remaining butter in a pan. Add the pureed mixture and bring it to boil. Add the marinated chicken, salt and fresh cream and mix well.
  6. Add water to the mixture to make sure the consistency is not too thick.
  7. Add sliced green chillies, crushed fenugreek leaves .Simmer it for few minutes. Bring it to a full boil
  8. Garnish it with coriander leaves and cream topped up, serve it with naan or rice.

My Tip:

You can garnish with pumpkin seeds to add zing to this recipe
