SAVOURY CUCUMBER MINT CHEESECAKE

Ingredients to make SAVOURY CUCUMBER MINT CHEESECAKE

  • Monaco biscuits 175 gms
  • White butter 75 gms
  • Lemon rind of 1 large lemon
  • Pepper to taste
  • Cream cheese 100 gms
  • Greek yogurt 250 gms
  • Gelatin 1 tbsp
  • Cucumbers 2 medium
  • Mint leaves 12-14
  • Garlic clove 1 large
  • Salt to taste
  • Paprika 2 large pinches
  • Water 4 tbsp
  • Lemon juice of 1/2 lemon

How to make SAVOURY CUCUMBER MINT CHEESECAKE

  1. Crush the monaco biscuits in a grinder to a fine powder
  2. Heat the white butter and add it to the crumbs and mix well till mixture resembles wet sand
  3. Add 1/2 of the lemon rind and keep left over aside
  4. Add pepper to this mixture
  5. Take a 6" springform pan and grease it with some white butter
  6. Layer the crumb mixture on the bottom and sides and press well with hands
  7. Leave it in the refrigerator to chill for 20 mins
  8. Grate the cucumber and drain it well removing all the water
  9. Soften the cream cheese and add yogurt, garlic, paprika, salt and pepper to taste, chopped mint, cucumber, lemon juice and remaining rind.
  10. Mix them well
  11. Dissolve gelatin in water and add it in the end to this mixture
  12. Mix thoroughly
  13. Leave it to rest for 5-10 mins and then pour it in your prepared tin with biscuit base
  14. Cover well with plastic wrap and chill overnight
My Tip: Make sure you drain water from cucumber well
