Kurkuri Bhindi with Spicy Yoghurt Gravy

Ingredients to make Kurkuri Bhindi with Spicy Yoghurt Gravy

  • For kurkuri bhindi:
  • Bhindi- 250 gms
  • Gram flour (besan)- 2 tbsp
  • Red chilli pd- 1/2 tsp
  • Chaat masala pd- 1/2 tsp
  • Salt- as per taste
  • Oil for frying.
  • For yogurt gravy:
  • Mustard seeds- 1/2 tsp
  • Cumin seeds - 1/2 tsp
  • Hing - 1/4 tsp
  • Ginger garlic paste- 1 tbsp
  • Green chillies- 1 -2
  • Onion (fine chopped)- 1
  • Yogurt- 1/2 cup (whisked)
  • Tomato- 1(fine chopped)
  • Turmeric pd- 1/2 tsp
  • Coriander pd- 1/2 tsp
  • Salt- as per taste
  • Coriander leaves (fine chopped)- few.

How to make Kurkuri Bhindi with Spicy Yoghurt Gravy

  1. For kurkuri bhindi:
  2. Wash bhindi, pat dry, trim the edges. Make a slit in each piece. Mix well with all ingredients listed under kurkuri bhindi. In a non-stick pan fry all the bhindi till crispy. Keep aside
  3. For yoghurt gravy. Heat oil in a deep bottomed pan, add mustard, cumin, hing, ginger garlic paste. Fry little, then add chopped onion, fry till they turn translucent. Then add chopped tomato, cook till it turns mushy. Now add all the dry pd- turmeric, coriander pd, red chilli pd, salt. Cook for 5 mins.
  4. Finally add curd, stir well. Add water as required.
  5. Finally add the bhindi, give it a nice stir. Garnish with coriander.
  6. Serve it with rice or phulka for a perfect weekday lunch.
