Vatidaal khaman

Ingredients to make Vatidaal khaman

  • 500 Gm Bengal gram dal ( chanadal) soaked 5 hours .
  • 1 small bowl buttermilk
  • Salt
  • 1 pack eno fruitsalt
  • 1 tsp ginger chilly paste
  • 100 Gm oil
  • 3 tbsp mustard seeds
  • 8 greenchillies chopoed
  • Few coriander leaves for garnish

How to make Vatidaal khaman

  1. Grind soaked chanadaal , add buttermilk and keep in sunlight for 4 hours to ferment .
  2. Add salt , ginger chilly paste, fruitsalt and mix well batter if required add water but batter should not be runny
  3. grease a plate with 2 tbsp oil and add batter till dish is filled batter
  4. keep it in dhokla steamer for 15 mins
  5. Remove the plate from steamer .
  6. Heat oil in wok, add mustard seeds and green chillies and when it crackles temper on the khaman plate . now cut it and garnish with coriander and serve it .
My Tip: Batter shouldn't be runny .
