Lemon Rice

Ingredients to make Lemon Rice

  • 2 cups - cooked rice
  • I - big lemon
  • 2 tbsp - oil (preference sesame oil)
  • 1/2 tsp - mustard seeds
  • 1/2 tsp - urad dal
  • 1/2 tsp - chana dal
  • Asfoetida a pinch
  • 1/2 tsp - turmeric powder
  • 2 - green chilles (slit)
  • 2 - whole red chilli
  • Few Cashew nuts
  • Coriander and curry leaves

How to make Lemon Rice

  1. Take two cups of cooked rice. Add oil in a frying pan and heat.
  2. Add muatard seeds, urad dal, chana dal, asfoetida, red chiles, green chilli, curry leaves and coriander leaves. Stir and add turmeric powder, then add rice, salt and give a mix. Switch off the flame.
  3. Add lemon, juice adjust salt and add fried cashew nuts.
  4. Serve with papad or chips.
My Tip: Sesame oil is good but you can also can use peanut oil. Can add fresh or frozen peas.
