Ingredients to make Stir Fried Pumpkin With Sesame Seeds

  • Pumpkin (Cut in cubes) - 2 Cups
  • Curry leaves - 10-12
  • Mustard seeds - ½ tsp
  • White sesame seeds - 1tsp
  • Grated ginger - 1/2tsp
  • Dry red chili - 3-4
  • Asafoetida (hing) - A pinch
  • Turmeric powder - 1 tsp
  • Salt to taste
  • Oil - 2 tbsp

How to make Stir Fried Pumpkin With Sesame Seeds

  1. Peel, wash and cut the pumpkin into cubes. Heat oil in a kadhai, when hot add hing, mustard seeds, dry red chili, curry leaves. As the mustard seeds start to splutter, add ginger, stir.
  2. Add cubed pumpkin, salt turmeric, cover and cook for 7-8 min. Uncover, cook over high heat, sprinkle sesame seeds. Cook for 2-3 min. Serve hot with steamed rice and dal.

My Tip:

If the pumpkin is not sweet, add sugar to balance the taste.
