Til or sesame seeds are very good for our health and when added to a stir fry brings a nice texture to the dish too. Here is a simple sweet ripe pumpkin stir fry with aromatic curry leaves and a generous sprinkle of sesame seeds.
Peel, wash and cut the pumpkin into cubes. Heat oil in a kadhai, when hot add hing, mustard seeds, dry red chili, curry leaves. As the mustard seeds start to splutter, add ginger, stir.
Add cubed pumpkin, salt turmeric, cover and cook for 7-8 min. Uncover, cook over high heat, sprinkle sesame seeds. Cook for 2-3 min. Serve hot with steamed rice and dal.
