Homemade Dabeli Masala

Ingredients to make Homemade Dabeli Masala

  • 1/2 Cup - Coriander seeds
  • 1/4 Cup - Cumin seeds
  • 2 tsp - Fennel seeds
  • 1/2 tsp - Black pepper
  • 5 - Cloves
  • 4-5 - Red whole Kashmiri chilies +1 tsp - Red chilli flakes
  • 4 blade - Mace
  • 1 - Star anise
  • 2 - Bay Leaves
  • 4 - Black and 2 - Green cardamom
  • 1 inch - Cinnamon stick
  • 1 - Sesame seeds
  • 1 1/2 tsp - Desiccated coconut
  • 1 tsp - Sugar
  • 1/4 tsp - Citric acid
  • 1/4 Tsp - Asafoetida
  • 1 tsp - Raw mango powder
  • 3/4 tsp - Black salt
  • 1 tsp - Ginger powder
  • 2 tsp - Oil
  • Salt to taste

How to make Homemade Dabeli Masala

  1. Heat a pan add all whole seeds and garam masala in it and dry roast, except ginger powder, sugar, salt and citric acid. When a nice roasted aroma starts coming switch off the gas and keep aside to cool.
  2. When cool transfer in mixer jar and add all the ingredients which are not roasted, grind everything well.
  3. Add some oil and again grind till nicely powdered.
  4. When done remove from jar. Dabeli masala is ready to be used. Keep in an air tight jar.

My Tip:

Don't roast too much otherwise burning smell will come which will spoil the taste of Dabeli.
